Brazilian black bean stew with bacon, green bell peppers, and cilantro - a comforting and quick meal.
Ingredients:
  • 2 strips bacon, diced
  • 0.5 cup minced onion
  • 0.5 cup minced green bell pepper
  • 2 tablespoons chopped fresh cilantro
  • 2 cloves garlic, minced
  • 1 bay leaf
  • 2 (15 ounce) cans black beans, drained
  • 0.5 cup chicken broth, or more as needed
  • 1 teaspoon vinegar
  • 1 dash hot sauce to taste
Instructions:
  • Fry bacon in a pot over medium heat until almost crisp, for 3 to 5 minutes. Add onion and green pepper; cook and stir until onion turns translucent, around 5 minutes. Stir in cilantro, garlic, and bay leaf; cook until flavors meld, for 1 to 2 minutes.
  • Combine beans, chicken broth, vinegar, salt, pepper, and hot sauce into the onion mixture. Cover and simmer for 10 to 15 minutes to marry the flavors. If desired, adjust consistency by adding more chicken broth for a soupier texture.
