Create a flavorful bean soup with canned beans, onion, bacon, and spices for a quick and tasty meal.
Ingredients:
  • 6 slices bacon, chopped
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 2 cups chicken broth
  • pinch of dried oregano
  • pinch of cayenne pepper
  • 0.5 teaspoon ground cumin
  • salt to taste
  • 2 (14.5 ounce) cans black beans, rinsed and drained
  • 14.5 fluid ounces water
  • 0.5 teaspoon ground black pepper
  • 0.33333334326744 cup minced green onion
  • 2 teaspoons sambal paste (or minced red chiles)
  • juice of 1 lime
  • 2 tablespoons chopped green onion
  • 3 tablespoons sour cream
Instructions:
  • Add the bacon to a cold pot. Cook over medium heat, stirring occasionally, until the bacon is fully cooked but not crispy.
  • Cook the onion for 5 minutes until it becomes translucent and golden in color.
  • Sauté garlic for 2-3 minutes, then pour in chicken stock and increase heat to medium-high. Sprinkle in oregano, cayenne, and salt. Fold in black beans and water, then bring to a simmer.
  • Simmer over gentle heat, occasionally stirring, for 20-30 minutes. Meanwhile, mash roughly half of the beans to add texture to the soup.
  • Incorporate black pepper and cumin, then season with salt to your liking.
  • Create a zesty relish by combining finely chopped green onion, spicy sambal paste, and tangy lime juice.
  • Top with relish, chopped green onions, and a dollop of sour cream for a flavorful finish.
