Delicious baked beans with three types of beans, bacon, and a rich molasses sauce.
Ingredients:
  • 1/4 pound sliced bacon
  • 2 cups chopped onion
  • 1 tablespoon dry mustard
  • 1 teaspoon minced fresh thyme (or 1/2 teaspoons dry thyme)
  • 3/4 cup ketchup
  • 3 tablespoons apple cider vinegar
  • 1/4 cup dark molasses
  • 1/3 cup water
  • 1 bay leaf
  • 1 15-ounce can red kidney beans, rinsed, drained
  • 1 15-ounce can black beans, rinsed, drained
  • 1 15-ounce can cannellini (white kidney beans), rinsed, drained
  • 1 teaspoon Tabasco
  • Salt
Instructions:
  • Preheat your oven to 350°F.
  • Crisp bacon in a Dutch oven over medium heat until browned. Drain on paper towels, crumble, and set aside.
  • Sauté the onions: Keep a tablespoon of the bacon drippings in the pot. Cook the chopped onions on medium-high heat until translucent, around 5 minutes.
  • Combine the remaining ingredients: Sprinkle onions with dry mustard and thyme. Mix in ketchup, vinegar, molasses, bay leaf, beans, Tabasco, and water. Season with salt and pepper to your liking.
  • For oven baking: Seal the pot with a lid, place it in a 350°F oven, and bake for 1 hour. Remember to stir every 15 minutes and add water if necessary. Add the bacon during the last 15 minutes of cooking. Remove the bay leaf before serving. For slow cooking: If using a slow cooker, cook on high for 4 hours or on low for 8 hours. Remove the bay leaf before serving.
