Brazilian cornbread cake: perfect with coffee.
Ingredients:
  • 2 cups cornmeal
  • 1.5 cups white sugar
  • 1 cup milk
  • 1 cup coconut milk
  • 1 cup all-purpose flour
  • 3 eggs
  • 0.33333334326744 cup vegetable oil
  • 1 teaspoon baking powder
Instructions:
  • Preheat your oven to a toasty 340 degrees F (170 degrees C) and generously grease and flour a 10-inch round cake pan.
  • In a blender, combine cornmeal, sugar, milk, coconut milk, flour, eggs, and vegetable oil until smooth. Add baking powder and blend to combine. Pour the mixture into the cake pan.
  • Bake in the oven until a toothpick inserted in the center comes out clean, for 30-40 minutes.
