Sweet polenta cakes with mascarpone

Deliciously moist polenta cakes, great for tea time and kid-approved!
Ingredients:
  • Melted butter, to grease
  • 275ml milk
  • 2 eggs, lightly whisked
  • 90g (1/2 cup) polenta (cornmeal)
  • 100g (1/2 cup) caster sugar
  • 65g (1/3 cup) sultanas
  • 25g butter, melted
  • 85g (1/3 cup) mascarpone, to serve
Instructions:
  • Preheat the oven to 200°C. Lightly brush four 185ml (3/4 cup) Texas muffin pans with melted butter.
  • In a medium saucepan over medium heat, mix together the milk, egg, polenta, sugar, sultanas, and butter. Stir constantly for 6 minutes until the mixture slightly thickens. Then transfer the mixture to a heatproof jug and pour evenly into the prepared pans. Bake in a preheated oven for 10-12 minutes until a skewer inserted into the centers comes out clean.
  • Take out of the oven and transfer the baked dish onto a wire rack. Present beautifully on a serving platter and offer with a side of luscious mascarpone.
