Indulge guilt-free with this healthier cafe-style banana bread recipe.
Ingredients:
  • 300g (2 cups) self-raising flour
  • 70g (1/3 cup, firmly packed) brown sugar
  • 100g walnuts, coarsely chopped
  • 2.50 gm bicarbonate of soda
  • 2 eggs, lightly whisked
  • 250ml (1 cup) milk
  • 260.00 gm (about 2 large) mashed banana
Instructions:
  • Preheat your oven to 180°C. Prepare a 6cm-deep, 20 x 10cm loaf pan by lining both the base and the sides with non-stick baking paper.
  • Sift flour into a large bowl, followed by sugar, walnuts, and bicarbonate of soda. Stir until well combined.
  • Gently fold together the egg, milk, and banana until well combined. Transfer the mixture into the lined pan and bake in the oven for 45 minutes, or until a skewer inserted into the center comes out clean. Let it cool completely before slicing and serving.
