Crunchy walnut pumpkin-banana bread, a moist and delightful treat for the family.
Ingredients:
  • 2 teaspoons unsalted butter, softened
  • 3.5 cups all-purpose flour
  • 3 cups white sugar
  • 0.5 cup toasted walnuts
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 0.5 teaspoon ground cloves
  • 0.25 teaspoon ground ginger
  • 2 tablespoons butter
  • 1 (15 ounce) can pumpkin puree
  • 4 eggs
  • 0.5 banana, mashed
  • 2 tablespoons honey
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C), then generously grease two 7x3-inch loaf pans with 2 teaspoons of butter.
  • Combine flour, sugar, walnuts, baking soda, salt, cinnamon, nutmeg, cloves, and ginger in a large bowl. Add cubed 2 tablespoons of butter to the mixture.
  • In a bowl, combine pumpkin puree, vegetable oil, eggs, banana, and honey, and whisk until smooth. Gently fold in the flour mixture until just blended. Transfer the mixture into the loaf pans.
  • Bake in the oven until a toothpick comes out clean when inserted in the center, about 50-55 minutes. Allow to cool in the pans for 5 minutes, then invert onto a wire rack to cool completely.
