Mouthwatering South Philly-inspired roast pork sandwiches with garlic pork, spinach, and tangy Manchego cheese.
Ingredients:
  • 1 (3 pound) pork shoulder roast
  • 3 tablespoons chopped fresh rosemary
  • 3 tablespoons chopped fresh parsley
  • 3 cloves garlic, chopped
  • 4 teaspoons olive oil, divided
  • 1 tablespoon kosher salt, plus more to taste
  • 1 tablespoon freshly ground pepper, plus more to taste
  • 1 cup water, or more as needed
  • 1 tablespoon olive oil
  • 2 cloves garlic, chopped
  • 0.5 teaspoon red pepper flakes
  • 0.5 cup chicken stock
  • 12 ounces fresh spinach
  • 1 medium lemon, juiced
  • 1 cup shredded Manchego cheese
  • 4 crusty rolls
Instructions:
  • Preheat the oven to 325°F (165°C) for the perfect bake.
  • Prepare the pork: Carefully remove the netting or strings from the pork roast, keeping them whole for later use. In a bowl, mix together rosemary, parsley, garlic, 3 teaspoons of oil, 1 tablespoon of kosher salt, and 1 tablespoon of pepper. Unroll the pork roast and evenly spread the herb mixture on it. Roll up the pork and tie it securely with the netting or string. Rub the remaining 1 teaspoon of oil all over the pork and season generously with more salt and pepper.
  • Place the pork with the fat side facing up in a roasting pan and gently pour in the water.
  • Roast in the oven, brushing with pan juices and adding water as needed, until meat thermometer reads 145°F (63°C), for 1 1/2 to 2 hours. Rest for 10-15 minutes before serving, keeping pan juices for later.
  • While the pork rests, get the fixings ready: Heat oil in a frying pan over medium heat. Sauté garlic and red pepper flakes until fragrant but not browned, about 3 minutes. Pour in chicken stock, bring to a boil, then add spinach, lemon juice, salt, and pepper. Cook on medium-low heat until spinach wilts, 2 to 3 minutes.
  • Remove the string from the roast and slice the pork thinly. Place the sliced pork back into the flavorful juices in the roasting pan.
  • Split the sandwich rolls, generously sprinkle with flavorful Manchego cheese, layer with tender pork slices, and finish with fresh spinach leaves.
