Healthier gluten-free banana bread with reduced sugar for the whole family to enjoy.
Ingredients:
  • 200g plain flour
  • 80g desiccated coconut
  • 110g brown sugar
  • 8.00 gm gluten-free baking powder
  • 1.25 gm bicarbonate of soda
  • 200g banana
  • 165ml olive oil
  • 2 Free Range Eggs, lightly whisked
  • 2 tablepoons Pure Canadian Maple Syrup
  • 10g butter
  • 2 large just-ripe bananas, thickly sliced diagonally
  • Coles Finest Pure Canadian Maple Syrup, extra, to serve
Instructions:
  • Preheat the oven to 180C and prepare the loaf pan by greasing and lining the base and two long sides.
  • Mix together the flour, coconut, sugar, baking powder, and bicarbonate of soda in a bowl.
  • In a bowl, vigorously mix together mashed banana, oil, egg, and maple syrup. Combine with the flour mixture and pour into the prepared pan, smoothing the surface. Bake for 1 hour or until a skewer inserted in the center comes out clean. Let it cool for 5 minutes before transferring to a wire rack to cool completely.
  • Slice the banana bread and toast it. Then, melt butter in a non-stick pan over high heat. Cook the banana slices for 1 minute on each side until they are browned.
  • Serve the banana bread on plates, garnish with banana slices, and drizzle with maple syrup.
