Banana Coconut Flaxseed Muffins with Apple and Chia

Whip up these gluten-free banana coconut muffins with flaxseed, apples, and chia seeds for a quick and easy breakfast.
Ingredients:
  • 1.5 teaspoons butter
  • 1.25 cups flaxseed meal
  • 0.25 cup white sugar
  • 2 tablespoons chia seeds
  • 1 tablespoon baking powder
  • 1.5 teaspoons ground cinnamon
  • 3 ripe bananas, mashed
  • 3 eggs, beaten
  • 1 apple, chopped
  • 0.5 cup coconut flakes, or more to taste
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and generously butter a muffin tin.
  • In a bowl, mix flaxseed meal, sugar, chia seeds, baking powder, and cinnamon. Add bananas, eggs, and apple; mix well. Stir in 6 tablespoons of coconut flakes. Fill tin 3/4 full with batter and sprinkle the remaining 2 tablespoons of coconut flakes on top.
  • Bake in the preheated oven for around 30 minutes, or until the tops spring back when lightly pressed.
