Whip up this delicious egg-free banana coconut bread for a quick and satisfying breakfast.
Ingredients:
  • 375g self-raising flour
  • 85g desiccated coconut
  • 255g brown sugar
  • 1.25 gm bicarbonate of soda
  • 250ml banana
  • 125ml vegetable oil
  • 125ml buttermilk
  • Butter, softened, to serve
  • Honey, to serve
Instructions:
  • Preheat your oven to 180°C and prep your 11 x 21cm loaf pan by greasing and lining it with baking paper, leaving some overhang for easy removal later.
  • In a large bowl, combine flour, coconut, sugar, and bicarbonate of soda. Create a well in the center.
  • In a jug, whisk together the banana, oil, and buttermilk. Pour the mixture into the well, then gently fold with a wooden spoon until just combined. Transfer the batter into the prepared pan, then even out the surface with a spoon.
  • Bake in a preheated oven for 1 hour or until a skewer inserted in the center comes out clean. Allow it to rest for 5 minutes, then transfer to a wire rack to cool.
  • Enjoy the sliced bread toasted, spreading butter and honey as desired.
