Gluten-free banana bread made with coconut flour for a nostalgic taste.
Ingredients:
  • 3 eggs
  • 100mls maple syrup
  • 125ml (1/2 cup) vegetable oil
  • 4.40 gm vanilla extract
  • 390.00 gm (3 medium) over-ripe bananas, mashed
  • 210.00 gm coconut flour
  • 2.50 gm bicarbonate of soda
  • 6.00 gm baking powder (see note)
Instructions:
  • Preheat your oven to 180C/160C fan-forced and prepare a loaf pan by greasing and lining it with baking paper.
  • Combine eggs, syrup, and oil in a medium bowl, whisk until smooth. Stir in vanilla and banana until well mixed.
  • In a large bowl, mix the flour, bicarbonate of soda, and baking powder. Create a well in the center, then add the banana mixture and stir until combined. Spread the mixture evenly into the prepared pan and smooth the top.
  • Bake for 40 to 45 minutes or until a skewer comes out clean when inserted in the center. Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
