Chocolate banana coconut bread

Decadent banana bread with chocolate and coconut for a deliciously upgraded twist on a classic favorite.
Ingredients:
  • 2 eggs, lightly beaten
  • 1 large ripe banana, peeled and mashed
  • 8.80 gm vanilla extract
  • 215.00 gm caster sugar
  • 625.00 ml plain flour
  • 8.00 gm baking powder
  • 250.00 ml dessicated coconut
  • 250g milk chocolate, broken into pieces
  • 100g spreadable cream cheese, to serve
Instructions:
  • 1. Preheat your oven to 200°C. 2. Grease and flour a 19cm x 9cm x 6cm loaf pan. 3. Combine mashed banana, vanilla, eggs, and milk. 4. Mix in the sugar. 5. Sift flour and baking powder over the wet ingredients. 6. Add coconut and gently fold in using a large metal spoon.
  • Carefully fold the chocolate into the mixture. Transfer the batter to the loaf pan and bake for 1 hour and 15 minutes, or until a skewer inserted in the center comes out clean. Let it cool in the pan for 10 minutes, then transfer to a wire rack to cool completely. Serve sliced with cream cheese.
