Elevate banana bread with a hint of coconut for a tropical twist.
Ingredients:
  • 225g self-raising flour
  • 45g desiccated coconut
  • 100g brown sugar
  • 1 egg, lightly whisked
  • 125ml vegetable oil
  • 125ml coconut cream
  • 520.00 gm mashed ripe banana
  • 20g butter
  • 2 ripe bananas, extra, peeled, thickly sliced
  • Butter, to serve
Instructions:
  • Preheat your oven to 180°C and generously grease a 10 x 20cm loaf pan. In a large bowl, combine the flour, coconut, and sugar, creating a well in the center.
  • In a small bowl, mix the egg, oil, coconut cream, and banana. Pour this mixture into the flour mixture and gently stir with a wooden spoon until just combined.
  • Transfer the mixture into the pan and ensure the top is level. Bake in the preheated oven for 45 minutes or until a skewer comes out clean when inserted in the center. Cool on a wire rack.
  • In a large frying pan over medium-high heat, melt the butter until it becomes foamy. Add the banana slices and cook for 1-2 minutes on each side, flipping occasionally, until they caramelize.
  • Preheat the grill on high. Slice the banana and coconut bread thickly with a serrated knife. Toast the banana bread under the preheated grill. Serve with extra butter and caramelized banana.
