Banana, coconut and Nutella bread

Elevate banana bread with Nutella and coconut for a decadent twist.
Ingredients:
  • 375.00 ml plain flour
  • 150.00 gm self-raising flour
  • 5.00 gm ground cinnamon
  • 2.50 gm bicarbonate of soda
  • 135.00 gm brown sugar
  • 2 over-ripe bananas, mashed
  • 165ml can coconut milk
  • 110.55 gm golden syrup
  • 2 eggs, lightly beaten
  • 99.00 gm Nutella (see notes)
Instructions:
  • Preheat your oven to 180C (160C fan-forced). Grease a 7cm-deep, 9cm x 25.5cm loaf pan. Line the pan with two layers of baking paper, making sure the paper extends 2cm above the edges.
  • In a large bowl, sift together plain flour, self-raising flour, cinnamon, and bicarbonate of soda. Add sugar and stir to combine. Create a well in the center and add banana, coconut milk, syrup, oil, and egg. Mix well and spoon the batter into the prepared pan.
  • Spoon Nutella on top of the batter and swirl it using a butter knife for a marbled look.
  • Bake the loaf for 1 hour to 1 hour and 10 minutes, or until a skewer inserted into the center comes out clean. Allow it to rest in the pan for 10 minutes before transferring it onto a wire rack lined with baking paper. Let it cool completely before serving.
