Beat the heat with this quick and easy summer treat.
Ingredients:
  • 250g butternut snap biscuits
  • 83.33 gm coconut milk
  • 1 large mango, chopped
  • 1 large banana, chopped
  • 375.00 ml vanilla yoghurt
  • Extra chopped mango, to serve
Instructions:
  • Add the biscuits to a food processor and pulse until you get coarse crumbs. Set aside for later use.
  • Smoothly blend together coconut milk, mango, and banana until creamy. Pour mixture into a bowl and gently swirl in the yogurt until marbled.
  • Set aside 2 tablespoons of the biscuit mixture. Divide the rest of the biscuit mixture evenly among four 1 1/2 cup-capacity serving glasses. Layer half of the yogurt mixture on top. Repeat the layers. Garnish with extra mango and the reserved biscuit mixture before serving.
