Healthy, fluffy pancakes with a tropical twist of lime and coconut flakes.
Ingredients:
  • 435ml milk
  • 1 Free Range Egg
  • 1 ripe banana, coarsely chopped
  • 60g pkt Baby Spinach
  • 300g self-raising flour
  • 55g coconut sugar
  • 0.63 gm bicarbonate of soda
  • 20g butter, melted
  • Coconut yoghurt, to serve
  • Thinly sliced papaya*, to serve
  • Thinly sliced mango, to serve
  • Passionfruit pulp, to serve
Instructions:
  • Combine the milk, egg, banana, and spinach in a blender and blend until creamy.
  • In a large bowl, mix the flour, sugar, and bicarbonate of soda. Create a well in the center. Pour in the milk mixture and whisk until a smooth batter forms. Cover with plastic wrap and let it rest for 30 minutes.
  • Preheat a large non-stick frying pan over medium-low heat and brush with a touch of melted butter. Pour ¼ cup (60ml) of the batter into the pan and cook for 1-2 mins until bubbles form. Flip and cook for another minute until golden. Transfer to a plate and keep warm by covering with foil. Repeat with the rest of the batter and butter to make 16 fluffy pancakes.
  • Plate the pancakes evenly among serving dishes. Garnish with a dollop of creamy yogurt and a colorful mix of fresh papaya, mango, and passionfruit.
