Elevated banana bread with zesty passionfruit twist.
Ingredients:
  • 250g plain flour
  • 6.00 gm baking powder
  • 75g caster sugar
  • 65g brown sugar
  • 2.50 gm ground cinnamon
  • 2 eggs, beaten
  • 3 bananas, mashed
  • 250g cream cheese
  • 82.50 ml (4 tbsp) good-quality lemon curd (see note)
  • 40g icing sugar
  • 62.50 ml fresh passionfruit pulp (from about 4 passionfruit)
Instructions:
  • Preheat the oven to 160°C and prepare a loaf pan by greasing and lining it. Sift flour and baking powder into a bowl, then mix in sugars and cinnamon. Incorporate eggs, vanilla, and banana until smooth. Transfer the batter to the prepared pan.
  • Bake for 45-50 minutes until a skewer comes out clean when inserted in the center. Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
  • Prepare the butter by combining cheese, lemon curd, and sugar in a food processor. Pulse briefly until just mixed (avoid overmixing). Add the passionfruit and pulse 2-3 times to combine. Chill until serving. The passionfruit butter can be stored in the fridge for up to 1 week in a sealed container.
  • Cut the banana bread into slices and enjoy with the passionfruit butter.
