Banana and passionfruit snails

Introduce kids to a fun twist on sweet classic dough with these delightful banana and passionfruit snails.
Ingredients:
  • 90g butter, chilled, chopped
  • 450.00 gm self-raising flour
  • 195.00 gm mashed banana
  • 193.13 gm milk
  • 165.00 ml passionfruit pulp (see note)
Instructions:
  • Preheat your oven to a piping hot 220°C (200°C fan-forced) and prepare 2 large baking trays with baking paper.
  • Combine the butter and flour in a food processor until it resembles fine breadcrumbs, then transfer to a large bowl.
  • Create a well in the center of the mixture. Mix in the banana and milk with a butter knife until just combined. Transfer the dough onto a lightly floured surface and gently knead until it forms a cohesive dough. Roll the dough into a 2cm thick, 20cm x 30cm rectangle using a floured rolling pin.
  • Cover dough with a generous 1/2 cup of passionfruit, making sure to leave a 2cm border. Roll up the dough from one long side to create a log. Cut the log into 12 slices that are 2cm thick. Place the slices on prepared trays, ensuring they are 4cm apart and cut-side up. Brush the remaining passionfruit on top of each snail. Bake for 20 minutes until golden and cooked through. Enjoy warm or cold.
