Passionfruit and raspberry infused banana bread - a fruity twist on a classic favorite.
Ingredients:
  • 300.00 gm self-raising flour
  • 2.00 gm baking powder
  • 215.00 gm Brand Caster Sugar
  • 2 eggs
  • 150g butter, melted
  • 130.00 gm buttermilk
  • 2 large over-ripe bananas, mashed
  • 62.50 ml passionfruit pulp
  • 250.00 ml Brand Frozen Raspberries
  • Passionfruit curd, to serve (see related recipe)
Instructions:
  • Preheat oven to 180C (160C fan-forced). Grease and line base and 2 long sides of an 11cm x 21cm loaf pan.
  • In a large bowl, mix together the flour, baking powder, and sugar. In a medium bowl, whisk together the eggs, butter, buttermilk, bananas, and passionfruit. Combine this mixture with the flour mixture, stirring until just combined. Gently fold in the raspberries.
  • Transfer the mixture into the pan and level the top using the back of a spoon. Bake for 50 minutes or until a skewer inserted in the middle comes out clean. Let it cool in the pan for 10 minutes, then flip onto a wire rack to cool thoroughly. Enjoy warm or at room temperature served with passionfruit curd.
