Double banana bread with sweet oat streusel topping.
Ingredients:
  • 0.25 cup cold butter, cut into small pieces
  • 0.5 cup all-purpose flour
  • 0.25 cup packed brown sugar
  • 1 teaspoon ground cinnamon
  • 0.5 cup quick cooking oats
  • 1.25 cups white sugar
  • 0.5 cup butter, softened
  • 2 eggs
  • 3 ripe bananas, mashed
  • 0.5 cup buttermilk
  • 2.5 cups all-purpose flour
  • 2 teaspoons pumpkin pie spice
  • 0.5 teaspoon ground cinnamon
  • 1 cup chopped nuts
Instructions:
  • Preheat your oven to 350°F (175°C) and generously grease two 8 1/2 x 4 1/2-inch loaf pans.
  • Prepare the delightful streusel topping by combining 1/4 cup of diced butter, 1/2 cup of flour, brown sugar, 1 teaspoon of cinnamon, and oats in a bowl. Mix until you achieve a crumbly texture, then set it aside for later use.
  • In a bowl, combine the sugar and butter until creamy, then mix in the eggs. Incorporate the bananas, buttermilk, and vanilla extract until well combined. Fold in the flour, pumpkin pie spice, baking powder, cinnamon, and nuts until incorporated.
  • Divide the batter evenly into the loaf pans. Generously sprinkle each loaf with a layer of the delicious streusel topping.
  • Simply bake the loaves in the preheated oven for 1 hour and 15 minutes until beautifully risen with a golden brown topping. Allow the banana bread to cool in the pans for 5 minutes before transferring to a wire rack to cool completely.
