Indulge guilt-free with a low-fat treat from Betty Crocker's Diabetes Cookbook.
Ingredients:
  • 2 3/4 cups Bisquick Heart Smart® mix
  • 2/3 cup sugar
  • 1/3 cup quick-cooking oats
  • 1 cup mashed very ripe bananas (2 medium)
  • 1/4 cup milk
  • 2 eggs
  • 1 cup fresh or frozen (thawed and drained) blueberries
Instructions:
  • Preheat oven to 375°F and generously grease only the bottom of a 9x5-inch loaf pan with shortening or cooking spray.
  • Combine Bisquick mix, sugar, oats, bananas, milk, and eggs in a large bowl until just moistened. Beat vigorously for 30 seconds. Gently fold in the blueberries and pour the batter into the pan.
  • Bake for 45 to 60 minutes until a toothpick comes out clean. Let it cool for 10 minutes. Gently remove the loaf from the pan and place it top side up on a cooling rack. Allow it to cool completely for about 2 hours before slicing.
