Ingredients:
  • 2 cups all-purpose flour
  • 1 cup white sugar
  • 0.5 cup butter, softened
  • 2 ripe bananas, mashed
  • 1 cup fresh blueberries
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and generously grease 3 mini loaf pans.
  • Combine the flour, baking soda, and salt in a medium bowl.
  • In a large bowl, use an electric mixer to whip the sugar and butter until pale and fluffy.
  • For optimal results, gently add eggs one at a time, ensuring each is well incorporated before adding the next. Blend in fragrant vanilla extract, then fold in mashed bananas until smooth.
  • Gradually add the flour mixture while beating gently until a thick batter forms. Gently fold in the blueberries until evenly mixed.
  • Transfer the batter into the greased loaf pans.
  • Bake in the preheated oven for 30-35 minutes or until a toothpick inserted into the center comes out clean. Let cool in the pans for 10 minutes, then transfer the loaves to a wire rack to cool completely.
