Indulge in delicious blueberry banana bread.
Ingredients:
  • 1 cup butter or margarine, softened
  • 1 2/3 cups sugar
  • 4 eggs
  • 5 medium ripe bananas, mashed
  • 1 cup reduced-fat sour cream
  • 2 teaspoons vanilla
  • 3 cups Gold Medal™ all-purpose flour
  • 2 teaspoons baking soda
  • 1 cup dried blueberries
Instructions:
  • Position the oven rack in the lower part of the oven to ensure even baking. Preheat the oven to 350°F. Grease only the bottom of two loaf pans sized 8 1/2x4 1/2x2 1/2 or 9x5x3 inches.
  • In a large bowl, cream together the butter and sugar until smooth using an electric mixer. Mix in the eggs until well combined. Fold in the bananas, sour cream, and vanilla until smooth. Gently incorporate the flour, baking soda, and salt until just combined. Lastly, fold in the blueberries before pouring the batter into pans.
  • Bake for 1 to 1 hour 10 minutes until a toothpick inserted in the center comes out clean. Let it cool for 10 minutes, then gently remove the loaves from the pans. Allow them to cool completely on a wire rack before slicing. Store tightly wrapped in the refrigerator for up to 1 week.
