Delicious and popular moist blueberry quick bread recipe. Use thawed frozen blueberries for extra juiciness - increase to 3/4 cup.
Ingredients:
  • 0.5 cup fresh blueberries
  • 1.625 cups all-purpose flour
  • 0.5 cup quick cooking oats
  • 0.5 cup chopped pecans
  • 1 teaspoon baking soda
  • 0.25 teaspoon salt
  • 0.5 cup shortening
  • 1 cup white sugar
  • 2 eggs
  • 1 cup mashed bananas
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C), and prepare a 9x5-inch loaf pan by greasing and flouring it.
  • In a medium bowl, coat blueberries with 2 tablespoons of flour. Combine gently with oats, nuts, 1 1/2 cups flour, baking soda, and salt.
  • Cream shortening in a large bowl. Gradually add sugar, beating until light and fluffy. Add eggs one at a time, beating well after each addition. Stir in mashed banana. Gently fold in blueberry mixture until moistened. Transfer batter to the prepared pan.
  • Bake at the set temperature until a wooden toothpick inserted in the center comes out clean, about 50-55 minutes. Let it cool in the pan for 10 minutes, then remove and cool completely on a wire rack.
