Transform your favorite banana bread into irresistible banana muffins with ripe bananas and nuts. Ready to enjoy in just 30 minutes - no mixer required!
Ingredients:
  • 2 to 3 ripe bananasthoroughly mashed (about 1 1/4 cup mashed)
  • 1/3 cup melted butter (salted or unsalted)
  • 3/4 cup sugar
  • 1 large egg, beaten
  • 1 tablespoon strong brewed coffee or espresso, or a pinch of instant coffee granules mixed with a tablespoon of water (optional)
  • Pinch of salt
  • 1 1/2 cups of flour
  • 1 cup chopped walnuts or pecans (toasted or raw)
Instructions:
  • Preheat the oven to 350°F and line a muffin pan with paper liners.
  • In a large bowl, mash the bananas until smooth. Stir in the sugar until well combined. Add the egg and mix until incorporated. Incorporate the coffee, vanilla extract, and melted butter.
  • Mix the flour, baking soda, and salt together using a whisk.
  • Gently combine the flour mixture with the banana mixture in thirds until just incorporated, being careful not to over-mix. Then, fold in the chopped walnuts or pecans.
  • Spoon the batter into the muffin tin and bake at 350°F for 20 to 25 minutes until a skewer inserted in the center comes out clean and the tops bounce back when gently pressed. Cool on a rack.
