Delicious banana-nut muffins with pecans inside and on top for a sweet and crunchy treat.
Ingredients:
  • 1 tablespoon ground cinnamon
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon salt
  • 4 overripe bananas, divided
  • 1 cup chopped pecans, divided, or as needed
  • 2 cups brown sugar
  • 0.25 cup white sugar
  • 1.5 sticks unsalted butter, melted and cooled
  • 2 eggs
  • 1 teaspoon pure vanilla extract
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and line 18 muffin cups with paper liners.
  • In a spacious bowl, mix together flour, cinnamon, baking powder, baking soda, and salt.
  • In a small bowl, gently mash 2 bananas with a fork for a slightly textured consistency. Stir in 1/2 cup of chopped pecans.
  • In a separate large bowl, mash the 2 remaining bananas. Add brown sugar and white sugar, then blend with an electric mixer for 3 minutes. Incorporate melted butter, eggs, and vanilla, mixing for an additional minute. Combine the banana-sugar mixture with the flour mixture until fully mixed, then gently fold in the banana-pecan mixture.
  • Divide the batter evenly among the prepared muffin cups and sprinkle the remaining pecans on top.
  • Bake in the preheated oven for 16-17 minutes until tops spring back when lightly pressed. Avoid overbaking. Let cool in the tins for 5 minutes, then transfer to a wire rack to cool completely.
