Delicious banana nut muffins with egg whites, oil, walnuts, and zesty lemon for a burst of flavor.
Ingredients:
  • 1.5 cups all-purpose flour
  • 1.5 teaspoons baking powder
  • 0.25 teaspoon baking soda
  • 0.125 teaspoon salt
  • 2 egg whites
  • 1 cup mashed bananas
  • 0.75 cup white sugar
  • 3 tablespoons vegetable oil
  • 1 teaspoon lemon zest
  • 0.25 cup chopped walnuts
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and place paper liners in a 12-cup muffin tin.
  • Combine flour, baking powder, baking soda, and salt in a large bowl, stirring until well mixed.
  • Whisk foamy egg whites in a medium bowl. Mix in bananas, sugar, oil, and lemon zest. Gently fold in flour mixture until just combined. Add walnuts. Fill muffin cups 2/3 full.
  • Bake until the tops are lightly browned, for 20 to 25 minutes in the preheated oven. Then transfer the muffins to a wire rack to cool.
