Wholesome banana nut muffins with oats, almond butter, and coconut oil - perfect for a convenient, satisfying treat anytime.
Ingredients:
  • 1.75 cups oats
  • 3 bananas
  • 1 cup crunchy almond butter
  • 0.5 cup milk
  • 0.33333334326744 cup agave nectar
  • 0.25 cup coconut oil, melted
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
Instructions:
  • Preheat the oven to a toasty 350 degrees F (175 degrees C) and prepare 18 miniature muffin cups with a touch of grease or paper liners.
  • Transform the oats into flour in a blender. Combine with bananas, almond butter, milk, agave nectar, coconut oil, egg, vanilla extract, baking powder, cinnamon, baking soda, and salt in the oat flour mixture. Blend until achieving a smooth batter. Fill the muffin cups with the batter.
  • Bake in the oven until a toothpick inserted into the center of a muffin comes out clean, for 15 to 25 minutes.
