Blueberry and banana muffins

Kids can help make delicious banana blueberry muffins - a lunchbox favorite anytime!
Ingredients:
  • 300g self-raising flour
  • 150g brown sugar
  • 1 Free Range Egg
  • 185ml milk
  • 80ml vegetable oil
  • 2 bananas, mashed
  • 150g blueberry
  • Icing sugar, to dust
Instructions:
  • Preheat your oven to 180°C. Prepare a 12-hole muffin pan by lining it with paper cases that are 1/3 cup (80ml) in size.
  • In a large bowl, mix together the flour, sugar, and cinnamon. In a medium bowl, whisk together the egg, milk, oil, and banana. Combine the wet mixture with the flour mixture, add the blueberries, and gently stir until just combined. Avoid overmixing.
  • Spoon the blueberry mixture into the paper cases. Bake for 20-25 mins until a skewer comes out clean. Cool on a wire rack, dust with icing sugar, and enjoy warm or at room temperature.
