Naturally sweetened with bananas and blueberries.
Ingredients:
  • 1 cup mashed bananas
  • 1 egg
  • 0.5 cup water
  • 0.5 cup vegetable oil
  • 2 cups wheat flour
  • 1 teaspoon baking soda
  • 2.25 teaspoons baking powder
  • 1 cup fresh or frozen blueberries
Instructions:
  • Preheat your oven to 350°F (175°C), then prepare 18 muffin cups by greasing them or lining them with paper liners.
  • Combine mashed bananas, egg, water, and oil in a large bowl. Stir in flour, baking soda, and baking powder until mostly smooth with some banana lumps. Gently fold in the blueberries.
  • Bake in the preheated oven for approximately 15 minutes until golden and the tops spring back when lightly pressed. Then, remove muffins from tins and cool on a wire rack.
