Delicious no sugar-added berry tart, a guilt-free Father's Day indulgence topped with fresh berries.
Ingredients:
  • 1.25 cups all-purpose flour
  • 0.25 teaspoon salt
  • 8 tablespoons cold unsalted butter, cut into small cubes
  • 5 tablespoons ice cold water, or as needed
  • 1 (8 ounce) container mascarpone cheese
  • 0.5 cup heavy cream
  • 0.25 cup creme fraiche
  • 2 tablespoons sugar-free instant vanilla pudding mix, or more to taste
  • 8 ounces sliced fresh strawberries
  • 8 ounces fresh raspberries
Instructions:
  • Combine flour, cinnamon, and salt in a large bowl. Using a fork or pastry blender, cut in butter until mixture resembles coarse meal. Drizzle water over mixture, 1 tablespoon at a time, and mix with fork until dough forms.
  • Transfer the dough to a lightly floured surface. Shape it into a large ball swiftly, then flatten into a 5-inch disc. Wrap tightly in plastic wrap and chill in the refrigerator for at least 30 minutes.
  • Preheat the oven to 400°F (200°C) for the perfect cooking temperature.
  • Roll the cold dough on a lightly floured surface into a 14-inch circle about 1/4 inch thick. Carefully fold the dough in half, then transfer to a 10-inch tart pan. Unfold the dough and gently press it into the bottom and sides of the pan, trimming any excess dough. Use a fork to prick the dough all over, then place a sheet of parchment paper on top. Add pie weights or dried beans on top of the parchment paper.
  • Bake in the preheated oven for 20 minutes. Take out the pie weights or beans and parchment paper, then bake for an additional 5 to 10 minutes until golden. Let it cool before serving.
  • In a medium bowl, whisk together mascarpone cheese, cream, creme fraiche, and pudding mix until stiff peaks form. Fill the cooled tart shell with the filling, smoothing the top with a rubber spatula. Arrange the berries decoratively on top of the filling. Refrigerate until serving.
