Lemon Tart with Fresh Berries

Indulge in a refreshing summer treat - a lemon berry tart that's both elegant and irresistible!
Ingredients:
  • 2 cups all-purpose flour
  • 1 cup unsalted butter, at room temperature
  • 2 large eggs
  • 2 cups water
  • 3 large lemons, zested and juiced
  • 3 egg yolks
  • 3 tablespoons cornstarch
  • 1 tablespoon unsalted butter
  • 1.25 cups sliced fresh strawberries
  • 1 cup fresh raspberries
  • 0.75 cup fresh blueberries
  • 1 tablespoon powdered sugar, or more to taste
Instructions:
  • Preheat the oven to 350°F (180°C) and prepare a springform pan by greasing and lightly flouring it.
  • In a food processor, blend flour, butter, and eggs until a soft pastry ball forms. The dough will be delicate to handle. Flatten small portions of dough between your palms and press onto the base and sides of the springform pan until fully covering. Use a fork to prick all over the dough.
  • Bake in the preheated oven until lightly golden, for about 20 to 25 minutes. Let the pastry cool completely after removing it from the oven.
  • In a large bowl, whisk together water, sugar, lemon juice, lemon zest, egg yolks, cornstarch, and butter until smooth and well combined. Transfer the mixture to a small saucepan.
  • Stir the mixture over medium heat until the cream thickens and bubbles, then remove from heat. Pour the mixture into the pastry shell, spread evenly, and refrigerate until set, approximately 3 hours.
  • Once the custard is firm, adorn it with ripe berries and a sprinkle of powdered sugar for a delightful finish.
