Raspberry and Lemon Sparkler: A fruity and bubbly cocktail with fresh raspberries, tart lemon juice, and sparkling wine.
Ingredients:
  • 75g raspberry
  • 20.00 gm caster sugar
  • 10.60 gm lemon juice
  • Fresh raspberries, to serve
  • 750ml btl chilled sparkling wine (see tip)
  • Mint leaves, to serve
Instructions:
  • In a saucepan over medium heat, melt the flavors of frozen raspberries, sugar, and lemon juice for 5 minutes until the raspberries break down and juicy. Remove from heat and strain through a fine sieve into a jug, pressing with a spoon to extract maximum liquid. Chill in the fridge for 30 minutes.
  • Skewer fresh raspberries. Distribute raspberry mixture evenly into serving glasses. Garnish with wine, raspberry skewers, and mint leaves.
