Raspberry & ginger fizz

Summer calls for refreshing raspberry ginger cocktails.
Ingredients:
  • 2 handfuls raspberries
  • 1 teaspoon golden caster sugar
  • 1 good handful fresh mint leaves
  • 5 cm piece fresh root ginger peeled and roughly chopped
  • ice cubes
  • 8 shots vodka
  • 660 ml ginger beer
Instructions:
  • Combine raspberries, sugar, mint leaves, and chopped ginger in a large sturdy jug. Gently muddle the mixture with a wooden rolling pin until the ingredients are mashed together. Add ice cubes and gently crush them. Pour in vodka and ginger beer, then stir well. Serve in glasses with raspberries and mint leaves for garnish.
