Raspberry-Ginger Cider

Ruby-red double-fruit punch with a kick of tangy ginger.
Ingredients:
  • 1 bag (10 oz) frozen organic red raspberries
  • 1 bottle (64 oz) apple cider (8 cups)
  • 2 tablespoons honey
  • 2 cinnamon sticks
  • 1 piece (1 1/2 inches) gingerroot, peeled, thinly sliced
  • 3 thin slices orange, cut into quarters if desired
Instructions:
  • Set aside 1/2 cup of frozen raspberries for garnish.
  • In a 3-quart saucepan, bring the remaining raspberries, apple cider, honey, cinnamon sticks, and gingerroot to a boil over medium-high heat. Reduce the heat and simmer uncovered for 15 minutes.
  • After straining mixture, discard solids. To serve, garnish each with an orange slice and a few reserved raspberries. Enjoy hot.
