Elevate blueberry muffins with coconut, banana, and flax for a twist of flavor.
Ingredients:
  • 2 cups all-purpose flour
  • 2 cups quick-cooking rolled oats
  • 1 cup ground flax seed
  • 1 cup white sugar
  • 0.66666668653488 cup sweetened flaked coconut
  • 2 teaspoons ground cinnamon
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1.5 cups mashed ripe banana
  • 1 cup sour cream
  • 0.5 cup applesauce
  • 0.5 cup melted butter
  • 2 eggs
  • 1 tablespoon vanilla extract
  • 2 cups fresh blueberries
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C). Get your hands on 24 muffin cups and either give them a quick grease or line them with paper liners.
  • Combine flour, oats, flax, sugar, coconut, cinnamon, baking powder, baking soda, and salt in a bowl, whisk until well mixed.
  • Combine ripe bananas, tangy sour cream, sweet applesauce, rich melted butter, eggs, and fragrant vanilla in a spacious bowl. Gently incorporate the flour mixture into the banana mixture until all dry ingredients are just moistened; then delicately fold in juicy blueberries. Fill muffin cups two-thirds full with the batter.
  • Bake until a toothpick inserted near the center comes out clean, around 20 minutes in the preheated oven.
