Easy and delicious banana-blueberry bread, perfect for breakfast or dessert.
Ingredients:
  • 0.5 cup unsalted butter, at room temperature
  • 0.75 cup white sugar
  • 2 large eggs
  • 4 ripe bananas
  • 1 teaspoon pure vanilla extract
  • 2 cups unbleached all-purpose flour
  • 0.5 teaspoon salt
  • 1 cup fresh blueberries
Instructions:
  • Preheat the oven to a cozy 350 degrees F (175 degrees C) and grease a 9x5-inch loaf pan.
  • In a large bowl, whip butter until creamy. Blend in sugar until smooth. Incorporate eggs one by one until fully mixed. Fold in bananas and vanilla extract.
  • In a separate bowl, sift together flour, baking soda, and salt. Add this mixture to the banana mixture and gently fold in the blueberries. Transfer the batter to the loaf pan.
  • Bake in the preheated oven for about 1 hour until a toothpick inserted into the center comes out clean. Allow to cool in the pan for 10 minutes before transferring to a plate.
