Elevate classic banana nut bread with juicy blueberries and a decadent brown sugar crumble topping before baking to a perfect golden finish.
Ingredients:
  • 1 cup mashed banana
  • 1.5 cups fresh blueberries
  • 2 tablespoons cake flour
  • 0.5 cup steel-cut oats
  • 0.5 cup chopped pecans
  • 1.5 cups cake flour
  • 3 tablespoons cake flour
  • 1 teaspoon baking soda
  • 0.25 teaspoon salt
  • 0.5 cup white sugar
  • 0.5 cup brown sugar
  • 0.25 cup Greek yogurt
  • 0.25 cup applesauce
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 tablespoons cold butter
  • 0.25 cup brown sugar
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and prepare a 4 1/2x8 1/2-inch loaf pan by greasing and flouring it.
  • Toss blueberries with 2 tablespoons of cake flour until evenly coated.
  • Combine the blueberries, oats, pecans, 1 1/2 cups plus 3 tablespoons cake flour, baking soda, and salt in a bowl.
  • In a large bowl, mix together white sugar, 1/2 cup brown sugar, Greek yogurt, and applesauce until fluffy. Add eggs one at a time, beating well after each addition. Stir in vanilla extract and mashed banana until blended.
  • Gently fold blueberry-flour mixture into yogurt mixture until just combined. Transfer batter into prepared pan. Combine 1/4 cup brown sugar and butter in a small bowl, working it until crumbly; then sprinkle over the batter.
  • Bake in the oven until the bread is cooked through, approximately 55 minutes. Allow the bread to cool in the pan for 15 minutes, then transfer to a wire rack to cool for 1 hour.
