Blueberry-topped banana nut bread - irresistibly delicious!
Ingredients:
  • 0.5 cup canola oil
  • 0.33333334326744 cup cold water
  • 1 egg white
  • 2 large bananas, mashed
  • 2 cups all-purpose flour
  • 1.5 teaspoons baking soda
  • 2 tablespoons flax seeds
  • 0.25 cup chopped pecans
  • 1 pint fresh blueberries
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C and grease a 9x5 inch loaf pan.
  • In a bowl, combine canola oil, water, eggs, and egg white. Mix in the banana, then incorporate 1 cup of sugar. In a separate bowl, combine flour, baking soda, salt, and flax seeds. Add the banana mixture into the flour mixture and mix. Gently fold in the pecans. In another bowl, combine blueberries and 1/4 cup of sugar, then pour into the prepared pan. Pour the batter over the berries.
  • Bake in the preheated oven for about 45 minutes until a toothpick comes out clean. Allow the cakes to cool in the pans for 10 minutes, then run a knife along the edges. Invert the cake onto a plate or cooling rack.
