Plum Blueberry Upside-Down Cake

Vibrant plum and blueberry upside-down cake offers a delicious twist on the classic recipe.
Ingredients:
  • 1.25 cups all-purpose flour
  • 1.5 teaspoons baking powder
  • 0.25 teaspoon salt
  • 0.25 cup brown sugar
  • 3 tablespoons margarine
  • 1 cup white sugar
  • 0.33333334326744 cup margarine
  • 1 egg
  • 1 teaspoon vanilla extract
  • 0.75 cup milk
  • 4 black plums, pitted and thinly sliced
  • 0.75 cup blueberries
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and grease a 9-inch cake pan. Combine flour, baking powder, and salt; set aside.
  • In the prepared pan, mix brown sugar and 3 tablespoons of butter. Place the pan in the preheated oven until the butter melts and starts to bubble. Then, set it aside.
  • In a large bowl, use an electric mixer to beat 1 cup of white sugar and 1/3 cup of butter until light and fluffy. Add an egg, then stir in vanilla. Gradually mix in the flour mixture and milk, alternating between the two, just until incorporated.
  • Line the edges of the pan with plums, slightly overlapping them. Place blueberries in the center. Pour the batter over the fruit, making sure it covers them completely.
  • Bake in the preheated oven for 40 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let cool for 15 minutes before serving.
