Plum sausages, bacon, and butter beans create a delectable French cassoulet.
Ingredients:
  • 1 kg Outback Spirit pork kakadu plum sausages
  • 18.20 gm Brand pure olive oil
  • 1 onion, chopped
  • 175g Brand short cut bacon, chopped
  • 690g Brand Italian passata
  • 125.00 ml basil leaves, plus extra leaves to serve
  • 400g can Brand butter beans, rinsed, drained
  • 250g broccoli florets, steamed, to serve
Instructions:
  • Preheat a frying pan over medium heat. Sear sausages for 4-5 mins, flipping once, until beautifully browned. Transfer sausages from pan and gently wipe it clean with a paper towel.
  • In the same pan over medium heat, sauté onion until soft, about 5 minutes. Then add bacon and cook until browned, about 3-4 minutes. Stir in tomato passata, basil, and 1/2 cup water. Season with salt and pepper. Simmer until slightly thickened, about 5 minutes. Finally, add beans and mix well.
  • Slice sausages thickly, then simmer in tomato sauce for 2-3 mins until cooked through. Top with extra basil and serve with broccoli.
