Cumberland sausage casserole

Elevate breakfast with this gourmet English cassoulet featuring sausage, beans, and tomatoes.
Ingredients:
  • 10 banana shallots
  • 2 cloves of garlic
  • 6 thick Cumberland sausages
  • olive oil
  • 5 sprigs of fresh rosemary
  • 1 large glass of red wine
  • 2 x 400 g tins of chopped tomatoes
  • 2 x 400 g tins of cannellini beans
  • 4 small dried chillies
  • 2 large handfuls of breadcrumbs
Instructions:
  • Peel the shallots and finely slice the garlic. In a non-stick pan, cook sausages with oil, shallots, rosemary sprigs, salt, and pepper over medium heat for about 20 minutes until browned. Add wine, let it reduce, then stir in tomatoes and beans, and simmer for 20 minutes. Preheat oven to 180ºC/gas 4. Transfer sausage mixture to a baking dish and bake for 10-15 minutes. Chop remaining rosemary, crumble chillies, and mix with garlic and breadcrumbs. Sauté in a pan until golden. Remove stew from the oven, top with breadcrumbs, and bake for another 20 minutes. Serve with crusty bread.
