Wonderful wild garlic & sausage fusilli

Savory garlic pasta paired perfectly with flavorful Cumberland sausage.
Ingredients:
  • 2 heaped teaspoons fennel seeds
  • 2 dried red chillies crumbled
  • olive oil
  • 4 higher-welfare coarse Italian or Cumberland sausages
  • 4 handfuls wild garlic leaves washed, or 4 cloves of garlic, peeled, plus 4 handfuls of spinach leaves, washed
  • 320 g fusilli
  • 1 lemon
  • sea salt
  • freshly ground black pepper
  • 1 small handful Parmesan cheese freshly grated, plus extra for serving
Instructions:
  • Look for wild garlic in meadows in April or at good green grocers or farmer's markets. If you can't find it, blend fresh spinach and garlic. Crush fennel seeds and chillies. Heat olive oil in a pan, crumble sausage meat, brown it, then add crushed seeds and chillies. Boil water; blanch wild garlic for 3 mins or garlic cloves and spinach for 3-4 mins. Blend with olive oil, lemon zest, salt, and pepper. Cook pasta, saving some water. Toss pasta with sauce, sausage, Parmesan, and serve.
