Create a scrumptious banana bread with ripe, leftover bananas.
Ingredients:
  • 335g self-raising flour
  • 2.50 gm bicarbonate of soda
  • 2.50 gm ground cinnamon
  • 0.63 gm ground nutmeg
  • 150g caster sugar
  • 185ml milk
  • 125ml vegetable oil
  • 2 free range eggs
  • 4.40 gm vanilla extract
  • 2 ripe bananas, mashed
  • 125g punnet blueberries
  • Blueberries, extra, to serve
  • Honey, to serve
  • Butter, softened, to serve
Instructions:
  • Preheat your oven to 180C and prepare your 11cm x 21cm loaf pan by greasing and lining it with baking paper.
  • In a large bowl, mix together flour, bicarbonate of soda, cinnamon, nutmeg, and sugar. In a separate medium bowl, whisk together milk, oil, eggs, vanilla, and banana. Combine the wet and dry ingredients, stirring until well mixed. Gently fold in the blueberries.
  • Pour the mixture into the prepared pan, ensuring the top is smooth. Bake for 1 hour or until a skewer inserted in the center comes out clean. Allow it to cool in the pan for 10 minutes, then transfer to a wire rack to cool. Serve with additional blueberries, honey, and butter on the side.
