Irresistibly moist and delicious banana loaf with a healthy twist.
Ingredients:
  • Melted butter, to grease
  • 125ml (1/2 cup) mashed overripe banana
  • 100g (1/2 cup) caster sugar
  • 1 x 140g ctn apple fruit puree (Goulburn Valley brand)
  • 2 eggs
  • 125ml (1/2 cup) reduced-fat milk
  • 18.20 gm light olive oil or vegetable oil
  • 120g (3/4 cup) wholemeal self-raising flour
  • 120g (3/4 cup) white self-raising flour
  • 120g (3/4 cup) fresh blueberries
Instructions:
  • Preheat your oven to 180°C. Grease a 6cm-deep, 9.5 x 20cm loaf pan with melted butter, then line the base and two long sides with non-stick baking paper.
  • In a large bowl, mix together banana, sugar, apple, eggs, milk, and oil.
  • 1. Combine the flours and sift them over the mixture. 2. Introduce the husks from the sieve. 3. Employ a large metal spoon to gently incorporate the flour into the banana mixture until just mixed. 4. Add the blueberries and fold them in gently.
  • Pour the mixture into the pan lined with parchment paper and even out the top. Bake in the oven for one hour or until a toothpick inserted in the middle comes out clean. Allow it to cool for 10 minutes after removing from the oven, then transfer to a wire rack to cool completely. Slice and enjoy!
