Sugar-free blueberry and banana yoghurt cakes

Quick and flavorful blueberry banana cakes- a tasty time-saver!
Ingredients:
  • 150.00 gm self-raising flour
  • 75.00 gm wholemeal self-raising flour
  • 125.00 ml Stevia Sweet granules
  • 250.00 ml reduced-fat plain Greek-style yoghurt
  • 130.00 gm mashed banana (see note)
  • 56.88 gm extra-light olive oil
  • 1 egg
  • 250.00 ml frozen blueberries
Instructions:
  • Preheat oven to 190°C/170°C fan-forced and grease three mini muffin pans (1 1/2 tablespoon-capacity each).
  • Mix the flours and stevia in a bowl. In a separate jug, blend the yogurt, banana, oil, and egg together. Pour this mixture into the flour and stir until just mixed. Gently fold in the blueberries and spoon the batter into the prepared pan.
  • Bake for 12 minutes or until cakes are light golden and spring back when pressed. Let sit in pan for 5 minutes, then transfer to a wire rack to cool. Serve and enjoy!
