Delicious guilt-free fruit cake - no sugar, no gluten, all flavor!
Ingredients:
  • 200.00 gm almond meal
  • 1.25 gm bicarbonate of soda
  • 0.60 gm salt
  • 165.00 ml prunes, cut in half
  • 125.00 ml dried apricots, cut in half
  • 125.00 ml pistachios, cut in half
  • 82.50 ml dried cranberries
  • 3 eggs
  • 36.40 gm olive oil
  • 1 tsp vanilla bean paste
  • 1 tsp orange rind
  • Raw almonds, to decorate
Instructions:
  • Preheat your oven to 180C or 160C for a fan-forced oven. Grease and line an 8cm x 19cm loaf pan with baking paper.
  • In a large bowl, mix almond meal, salt, and bicarbonate. Add dried fruit and pistachios. In a separate large jug, whisk together eggs, oil, vanilla, and rind until combined. Fold the egg mixture into the almond mixture. Transfer the batter into the prepared pan, level the top with a spatula, and garnish with almonds.
  • Bake for 50 minutes, optionally covering loosely with foil if over-browning, until cooked when tested with a skewer. Let the cake stand in the pan for 5 minutes before transferring it onto a wire rack to cool completely.
