Transform your space with the irresistible scent of warm orange & almond cake.
Ingredients:
  • 2 large navel oranges, (choose oranges with unblemished skins as the whole fruit is used in this recipe)
  • 5 eggs
  • 250g caster sugar
  • 250g almond meal
  • 4.00 gm gluten-free baking powder*
  • Pure icing sugar to serve
Instructions:
  • Preheat your oven to 170°C while you prepare your heart-shaped pan by greasing and lining the base.
  • In a saucepan, submerge the two whole oranges in water, bring to a boil, then simmer covered for 1 hour, making sure the oranges are always covered with water. Drain, let cool, quarter the oranges, remove any seeds, then blend into a smooth puree.
  • Whisk together eggs and sugar until thick. Stir in orange puree, ground almonds, and baking powder until well combined.
  • Transfer the mixture to the pan and bake for 1 hour. Let the cake sit in the pan for 20 minutes, then flip it over, remove the parchment paper, and let it cool upright. For optimal flavor, make the cake up to 48 hours ahead.
  • Before serving, delicately sift a generous amount of icing sugar over the top, then elegantly garnish with freshly grated orange zest and crunchy almonds for a visually stunning presentation.
