Delicious gluten-free orange cake - perfect for tea or dessert with optional orange sauce.
Ingredients:
  • 3 eggs, separated
  • 0.66666668653488 cup white sugar
  • 0.25 cup rice flour
  • 0.5 cup orange juice
  • 1.5 cups finely ground almonds (almond meal)
  • 2 tablespoons heavy cream
  • 2 cups white sugar
  • 1 cup orange juice
  • 1 tablespoon grated orange zest
  • 0.5 cup butter
  • 4 egg whites
Instructions:
  • Preheat the oven to 325°F (165°C). Prepare the 10-inch springform pan by greasing it with cooking spray and dusting it with rice flour.
  • Using an electric mixer, whisk egg yolks and 2/3 cup of sugar in a large bowl until thick and pale, about 5 minutes. Add rice flour and orange juice, then gently fold in almond meal and cinnamon.
  • Whip 3 egg whites in a separate glass or metal bowl until they form stiff peaks. Gently fold into the almond mixture until fully combined. Spread the mixture evenly in the prepared pan.
  • Bake in a preheated oven for 35 to 40 minutes, or until a toothpick inserted into the center comes out clean. Allow to cool in the pan on a wire rack, then gently loosen the cake by running a knife around the edges before removing from the pan.
  • Prepare a luscious orange sauce by combining butter and 2 cups of white sugar, then mixing in cream over simmering water. Add orange juice and zest, and gently fold in whipped egg whites until combined. Drizzle over the cake and enjoy promptly.
